The extensometer became the prototype of a modern device for the comprehensive study of the properties of grain and flour - the Alveograph. The alveograph determines the parameters of elasticity, extensibility, elasticity and baking strength of the dough. These data make it possible to optimize the composition of mixtures of grain and flour, to improve the plasticity of flour, to produce various types of flour for specific purposes.
